Thermomix Apple and Cinnamon Pikelets

These Thermomix Apple and Cinnamon Pikelets make a great easy breakfast, lunchbox and after school snack!

My boys LOVE making (and eating!) pikelets, and these Apple and Cinnamon Pikelets have quickly become one of our new favourite recipes.

To make these pikelets just that little bit better for the kids, I like to use wholemeal self raising flour, however you can easily substitute with regular self raising flour if your prefer.  I also use whatever type of apples we have sitting in the fruit bowl, and I also leave the skin on to add some extra fibre.

Ingredients
  • 100g of grated apples (approximately 2 medium sized apples)
  • 150g of wholemeal self raising flour
  • 1 tablespoon of caster sugar
  • 60g of butter
  • 185ml of milk
  • 1 egg
  • 1 teaspoon of cinnamon
  • Butter to grease the frying pan
Instructions
  1. Grate the apples by hand or by removing the core and placing into your Thermomix bowl for 3 seconds on speed 5. Transfer to a separate bowl and set aside until needed.
  2. Place the butter into your thermomix bowl and cook for 2 minutes, 60 degrees, speed 2 or until melted.
  3. Add the wholemeal self raising flour, caster sugar, milk, grated apples, egg and cinnamon into your Thermomix bowl and mix for 10 seconds on speed 5 to combine.
  4. Heat your frying pan over a medium heat and all a little bit of butter. Place six tablespoons of the pikelet mixture (or however many will fit into your frying pan) and cook for approximately 2 minutes or until bubbles begin to appear on the surface.
  5. Carefully flip over the picket and cook for a further 1 minute on the other side before transferring to a plate and cover with foil to keep warm.
  6. Continue until you have used all of the apple and cinnamon pikelet mixture.
  7. You can serve these warm or cold with your choice of toppings or they are also great on their own.
