Thermomix Banana Apple Pikelets

When we recently found ourselves with an oversupply of green apples, it was the perfect excuse to bake up some yummy treats.  For something a little different I decided to add grated apple to our favourite pikelet recipe and the end result was a huge hit with both of my boys.

Thermomix Apple Pikelet Recipe

You just need a few ingredient to make these Thermomix Apple Pikelets and they make a great snack for the kids and are also lunchbox friendly.

Thermomix Banana and Apple Pikelets

These easy Thermomix Banana and Apple Pikelets are perfect for the entire family, freezer friendly and a great lunchbox snack!

Equipment

  • Thermomix
  • Frying Pan

Ingredients

  • 60 g butter
  • 50 g apple cored and chopped (approx ½ an apple)
  • 200g g self raising flour
  • 150 g milk
  • 1 teaspoon vanilla extract
  • 1 banana
  • 1 egg
  • extra butter to grease the pan

Instructions

  • Place the butter into your Thermomix bowl and cook for 2 minutes, 60 degrees, Speed 1 (or until melted).
  • Add the apple (which has been cut into chunks) and mix for 4 seconds, Speed 5, to grate.
  • Add the self raising flour, milk, vanilla extract, banana and egg and mix for 10 seconds, Speed 5. Scrape down the sides of the bowl and mix for a further 5 seconds, Speed 5.
  • Preheat your frying pan with a little butter over a medium high heat and add tablespoons of the pikelet mixture.
  • When bubbles begin to appear on the surface of the pikelets, carefully flip them over and cook for a further 30 seconds - 1 minute on the other side before transferring to a plate and cover with foil to keep warm. 
    Continue until you have used all of the mixture.
  • Serve these pikelets warm with your choice of toppings.

Notes

These Banana and Apple Pikelets are freezer friendly.
You can use any type of apples for this recipe.
I leave the apple skin on when making these pikelets, however you can peel them if you prefer.
if you find your mixture is too runny, add an extra tablespoon of self raising flour

If you manage to resist eating them all you can pop any leftovers into the freezer, which when stored in an airtight container will keep for up to 6 weeks.

We enjoyed our Apple Pikelets covered in sweet raspberry jam, but you can serve them on their own or with your favourite topping.
