What You Need

Just a handful of ingredients are needed to make these fun, festive treats!

  • Coconut Oil - this is what gives the Christmas crackles their crunch! Do not substitute this ingredient.
  • Cocoa Powder - use regular unsweetened cocoa powder.
  • Icing Sugar - you can use icing sugar mixture or pure icing sugar.
  • Rice Bubbles - or any brand of puffed rice.
  • Coconut - use fine, dry desiccated coconut.
  • White Chocolate - I recommend using white chocolate melts as they melt easier.
  • Spearmint Leaf Lollies - if you can't find spearmint leaves, use green lolly snakes chopped into pieces.
  • Raspberry Lollies - I use Allen's brand which is popular here in Australia.

Step By Step Instructions

Making Thermomix Christmas Crackles with the kids is such a simple and fun activity!

Step 1 - Melt

Place the coconut oil, cocoa powder and icing sugar into the Thermomix bowl.

Melt until smooth.

Step 2 - Mix

Add the coconut and rice bubbles and mix on REVERSE until combined.

TIP: Use the spatula to help mix.

Step 3 - Divide Between The Muffin Holes

Divide the mixture between muffin cases in a 12 hole muffin tin.

Press down with a spoon to flatten the surface.

Place into the fridge.

Step 4 - Decorate

Melt the white chocolate in a clean and dry Thermomix bowl.

Spoon a small amount of white chocolate (approximately 1 teaspoon) onto each chocolate crackle and then decorate with spearmint lollies (or chopped green lolly snakes) and raspberry lollies.

Expert Tips

Follow my top tips for the perfect Thermomix Christmas crackles!

  • using coconut oil ensures that the chocolate crackles stay crunchy. We do not recommend substituting this ingredient.
  • you can use Rice Bubbles or any brand of puffed rice. Make sure you use a fresh box of rice bubbles so that they are nice and crunchy (not stale!)
  • this is a great recipe to get the kids involved with!
  • once you've added the rice bubbles, ensure you use the REVERSE function, so as to not chop the rice bubbles.
  • if you can't find spearmint leaves, substitute them with chopped green lolly snakes
  • store in an airtight container for up to 1 week or freeze for up to 1 month

Just like I have in these photos, you can use green lolly snakes cut into small pieces.

Can I substitute the coconut oil for butter?

No, the coconut oil is what gives the chocolate crackles their crunchiness!

Equipment

  • Thermomix

Ingredients

  • 130 grams coconut oil
  • 30 grams cocoa powder
  • 50 grams icing sugar
  • 70 grams rice bubbles 2 cups
  • 40 grams desiccated coconut
  • 150 grams white chocolate
  • 12 raspberry lollies
  • 6 mint leaf lollies or green lolly snakes cut

Instructions

  • Place 12 paper cupcake cases into a 12 hole muffin tin and set aside until needed.
  • Place the coconut oil, icing sugar and cocoa powder into the Thermomix bowl and cook for 3 minutes, 70 degrees, Speed 2, or until melted and combined.
  • Add the coconut and rice bubbles and mix for 5 seconds, Speed 1, REVERSE, to combine. Use the spatula to help mix.
  • Scrape down the sides of your Thermomix bowl and mix for a further 5 seconds, Speed 1, REVERSE or until the mixture is well combined.
  • Divide the chocolate crackle mixture between your prepared cupcake cases and gently smooth the surface. Place into the fridge.
  • Place the white chocolate into a clean and dry Thermomix bowl. Grate for 5 seconds, Speed 8. Scrape the sides of the bowl.
    Melt for 3 minutes, 50 degrees, Speed 2 (or until melted).
  • Add a little white chocolate to the top of each chocolate crackle and then decorate with a raspberry and mint leaf (or lolly snake).
  • Place the chocolate crackles into the fridge for 30 minutes to set.
