This simple Thermomix Custard Cake is a light and flavour packed cake that makes the perfect dessert or special snack!

You won't be able to resist the subtle flavour of custard throughout this cake, and it is guaranteed to become a family favourite.

Ingredients

Please note you will find a full list of ingredients and the quantities required in the recipe card below.

  • Butter - it is important to use softened butter.
  • Caster sugar
  • Self-raising flour
  • Vanilla extract
  • Eggs - we use 70 gram eggs
  • Custard powder
  • Milk - either full cream or skim milk can be used.

How to make a Custard Cake in a Thermomix:

Step 1. Add the caster sugar and butter (which is softened) to a Thermomix bowl. Mix until pale and creamy.

Step 2. Add the remaining ingredients and mix until combined.

Step 3. Transfer the mixture to a prepared cake tin and gently smooth the surface.

Step 4. Place the cake into the oven to bake until golden and cooked through when tested with a skewer.

Step 5. Allow the cake to cool in the tin for 15 minutes before carefully transferring to a wire rack to cool completely.

Recipe Hints and Tips

It is essential to use butter which has been softened. If the butter is too firm, it will not incorporate with the caster sugar.

If the cake is browning too much during the cooking process, cover with a sheet of foil.

This cake can be baked in different sized/shaped tins, however the baking time will vary. Also please note this is a large cake, we do not recommend trying to bake it in a tin less than 20cm in diameter.

Serve this Custard Cake either plain or lightly dusted with icing sugar.

Store the Custard Cake in an airtight container at room temperature. Consume within five days.

Freeze for up to two months.

Thermomix Custard Cake

This simple Thermomix Custard Cake is a light and flavour packed cake that makes the perfect dessert or special snack!

Equipment

  • 1 x 20cm round cake tin
  • Baking Paper
  • Thermomix

Ingredients

  • 250 grams butter softened
  • 400 grams caster sugar
  • 300 grams self-raising flour
  • 2 teaspoon vanilla extract
  • 4 eggs 70 gram eggs
  • 90 grams custard powder
  • 250 grams milk

Instructions

  • Pre-heat oven to 170 degrees celsius (fan-forced). Line a 20cm round cake tine with baking paper and set aside until needed.
  • Place the butter and caster sugar into the Thermomix bowl. Mix for 40 seconds, speed 3 until pale and creamy.
  • Scrape down the sides of the Thermomix bowl and add the remaining ingredients. Mix for 15 seconds, speed 4.
  • Scrape down the sides of the bowl and mix of a further 10 seconds, speed 4 to combine.
  • Transfer the mixture to the prepared cake tin and place into the oven. Bake for 50 - 55 minutes or until golden and cooked through when tested with a skewer.
  • Allow the cake to cool in the tin for 15 minutes before carefully transferring to a wire rack to cool completely.
